  • 28 ounces Canned whole peeled tomatoes (preferably San Marzano)
  • 3 cups Vegetable broth (low sodium)
  • 1 leaf Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 6 leaves Basil leaves (fresh, optional garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced yellow onion and sauté for 3-4 minutes, until soft and translucent.

Stir in the minced garlic, diced carrot, and diced celery. Cook for another 5 minutes, stirring occasionally, until the vegetables begin to soften.
