Ingredients

  • 2 tablespoons olive oil
  • 6 cups celery stalks (chopped)
  • 1 medium yellow onion (chopped)
  • 2 cloves garlic cloves (minced)
  • 2 medium russet potatoes (peeled and chopped)
  • 4 cups vegetable broth
  • 1 cup water
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley (chopped, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped celery and onion to the pot, and sauté for 5-7 minutes, stirring occasionally, until softened.

Step 3

Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Step 4

Add the chopped potatoes, vegetable broth, water, salt, and black pepper. Stir to combine.

Step 5

Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and cook for 20-25 minutes, or until the potatoes are tender.

Step 6

Remove the pot from heat. Using an immersion blender, puree the soup until smooth and creamy. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return it to the pot.

Step 7

Stir in the lemon juice to brighten the flavors, and adjust seasoning with more salt and pepper if needed.

Step 8

Ladle the soup into bowls, garnish with chopped fresh parsley, and serve warm.
