Ingredients

  • 500 grams broccoli florets
  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 2 garlic cloves
  • 4 cups vegetable broth
  • 100 grams fresh spinach
  • 1 medium potato
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon lemon juice

Directions

Step 1

Wash the broccoli florets thoroughly and set them aside.

Step 2

Peel and dice the yellow onion and garlic cloves. Peel and chop the potato into small cubes.

Step 3

Heat the olive oil in a large pot over medium heat.

Step 4

Add the diced onion and garlic to the pot. Sauté for 2-3 minutes until fragrant and translucent.

Step 5

Add the chopped potato and broccoli florets to the pot. Stir to coat them with the oil and aromatics.

Step 6

Pour the vegetable broth into the pot and bring the mixture to a boil.

Step 7

Reduce the heat to low, cover the pot, and simmer for 20 minutes or until all the vegetables are tender.

Step 8

Add the fresh spinach to the pot and cook for an additional 2 minutes until wilted.

Step 9

Remove the pot from heat. Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup in batches into a blender and blend until creamy.

Step 10

Season the soup with salt, black pepper, and lemon juice. Adjust seasoning to taste.

Step 11

Serve the soup warm with a drizzle of olive oil or a sprinkle of freshly ground black pepper, if desired.
