Ingredients

  • 1.5 pounds asparagus
  • 2 tablespoons olive oil
  • 1 medium (chopped) yellow onion
  • 3 cloves (minced) garlic cloves
  • 4 cups vegetable broth
  • 1 medium (peeled and diced) potato
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons (chopped) fresh parsley or chives (optional, for garnish)

Directions

Step 1

Rinse the asparagus and trim the woody ends. Cut the spears into roughly 1-inch pieces, setting a few top tips aside for garnish if desired.

Step 2

Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for 5 minutes, or until softened and lightly golden.

Step 3

Stir in the minced garlic and cook for 1 minute, stirring frequently to prevent burning.

Step 4

Add the chopped asparagus (except reserved tips), diced potato, vegetable broth, salt, and black pepper to the pot. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for 20 minutes, or until the potatoes and asparagus are fork-tender.

While the soup is simmering, blanch the reserved asparagus tips in a small pot of boiling water for 1-2 minutes until bright green and tender. Remove and set aside for garnish.

Remove the soup pot from heat and use an immersion blender to puree the mixture until smooth and silky. If you don’t have an immersion blender, carefully transfer the soup in batches to a countertop blender and blend until smooth, then return to the pot.
