Ingredients

  • 1 cup Whole urad daal (black gram lentils)
  • 5 cups Water
  • 1 teaspoon Salt
  • 3 tablespoons Ghee (clarified butter) or unsalted butter
  • 1 medium, finely chopped Onion
  • 4 cloves, minced Garlic
  • 1 inch piece, grated Ginger
  • 2 medium, finely chopped Tomatoes
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoons Turmeric powder
  • 0.5 teaspoons Red chili powder
  • 1 teaspoon Garam masala
  • 0.5 cup Heavy cream
  • 2 tablespoons, chopped Fresh cilantro (coriander leaves)

Directions

Step 1

Rinse the urad daal thoroughly in cold water until the water runs clear, and soak it in water for 6-8 hours or overnight.

Step 2

Drain the soaked daal and add it to a deep pot with 4 cups of water and 1 teaspoon of salt. Bring it to a boil, reduce the heat to low, and simmer for 45-60 minutes, or until the daal is tender. Stir occasionally and add more water as needed to prevent it from sticking to the bottom.

Step 3

In a separate large skillet or deep pan, heat the ghee over medium heat. Add the finely chopped onions and sauté until golden brown, about 5-7 minutes.

Step 4

Stir in the minced garlic and grated ginger. Sauté for another 1-2 minutes until fragrant.

Step 5

Add the chopped tomatoes, ground cumin, ground coriander, turmeric powder, and red chili powder. Cook the mixture, stirring frequently, for about 6-8 minutes, until the tomatoes break down and the spices are well combined.

Step 6

Add the cooked urad daal along with any remaining cooking liquid into the skillet. Mix well and simmer gently for another 15-20 minutes, allowing the flavors to meld together. If it becomes too thick, add a splash of water.

Step 7

Stir in the heavy cream and garam masala. Cook for another 5 minutes, stirring occasionally, until the daal is rich and creamy.

Step 8

Taste and adjust the seasoning with salt if needed. Garnish with fresh cilantro before serving.

Step 9

Serve hot with steamed basmati rice or naan for a comforting and hearty meal.
