Directions

Step 1

Thoroughly rinse the fresh spinach under cold water to remove any dirt. Remove stems if desired.

Bring a large pot of water to a boil, then blanch the spinach for 1-2 minutes until wilted. Immediately transfer the spinach to an ice bath to stop the cooking process, then drain and squeeze out excess water. Roughly chop and set aside.
