  • 16 ounces Fresh spinach
  • 8 slices Bacon
  • 3 tablespoons Unsalted butter

  • 2 tablespoons All-purpose flour
  • 1.5 cups Milk
  • 0.5 cups Heavy cream
  • 1 cup Parmesan cheese, grated
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg, ground
  • 0.5 cups Breadcrumbs
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat the oven to 375°F (190°C). Grease a 9x9-inch baking dish and set it aside.

Cook the bacon in a large skillet over medium heat until crispy. Remove the bacon and place on paper towels to drain. Once cooled, crumble the bacon into small pieces and set aside.

In the same skillet, drain most of the bacon grease, leaving about 1 tablespoon. Add the fresh spinach and cook until wilted, about 3-4 minutes. Remove the wilted spinach, place it on a cutting board, and roughly chop. Set aside.
