Ingredients

  • 4 pieces (4-6 oz each) Salmon fillets (skinless)
  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 3 cloves Garlic cloves, minced
  • 1 medium Shallot, finely chopped
  • 2 tablespoons All-purpose flour
  • 1 cup Chicken or seafood stock
  • 1 cup Heavy cream
  • 1 quarter cup Parmesan cheese, grated
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh parsley, chopped
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Pat the salmon fillets dry with paper towels and season both sides with salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat. Once the butter has melted, add the salmon fillets, cooking for 3-4 minutes on each side until lightly golden and just cooked through. Remove the salmon from the skillet and set aside on a plate.

Step 3

In the same skillet, add the remaining 1 tablespoon of butter. When melted, add the minced garlic and chopped shallot, cooking for 2-3 minutes until fragrant and soft.

Sprinkle the flour into the skillet, stirring well to create a paste. Cook for 1 minute to remove the raw flour taste.
