Ingredients

  • 2 cups frozen peas
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 0.25 cup heavy cream
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder

Directions

Step 1

In a medium saucepan, bring 4 cups of water to a boil. Add the frozen peas and cook for 2-3 minutes, until tender but still vibrant. Drain the peas and set aside.

Step 2

In the same saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes, stirring constantly to form a roux. This eliminates the raw taste of the flour.

Step 3

Gradually whisk in the milk, about 1/4 cup at a time, ensuring it is fully incorporated before adding more to avoid lumps. Stir in the heavy cream for extra richness.

Step 4

Continue cooking the sauce over medium heat, stirring frequently, until it begins to thicken, about 3-4 minutes.

Step 5

Season the sauce with salt, black pepper, garlic powder, and onion powder. Taste and adjust seasonings to your preference.

Step 6

Add the cooked peas to the sauce and gently fold them in until they are evenly coated and heated through, about 1-2 minutes.

Step 7

Serve immediately as a side dish, garnished with additional black pepper or freshly chopped parsley, if desired.
