Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 pound cremini or white button mushrooms, sliced
  • 1 teaspoon thyme leaves, fresh
  • 4 cups vegetable or chicken stock
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 2 tablespoons parsley, finely chopped (for garnish)

Directions

Step 1

Heat the olive oil and butter in a large pot over medium heat.

Step 2

Add the chopped onion and sauté for 4-5 minutes until translucent.

Step 3

Stir in the minced garlic and cook for another 1 minute until fragrant.

Step 4

Add the sliced mushrooms and thyme, and cook for 8-10 minutes, stirring occasionally, allowing the mushrooms to release their moisture and become tender.

Step 5

Sprinkle the flour over the mushrooms and stir well, cooking for 1-2 minutes to remove the raw flour taste.

Step 6

Gradually pour in the vegetable or chicken stock, stirring constantly to prevent lumps, and bring the mixture to a simmer.

Step 7

Reduce the heat to low and let the soup simmer for 10-12 minutes, allowing all the flavors to meld together.

Step 8

Using an immersion blender (or transferring to a blender in batches), puree the soup until smooth, or leave it slightly chunky for texture, according to your preference.

Step 9

Stir in the heavy cream, and season with salt and black pepper to taste.

Step 10

Simmer for an additional 2-3 minutes to warm through, but do not let it boil.

Step 11

Serve hot, garnished with freshly chopped parsley and an extra drizzle of cream, if desired.
