Ingredients

  • 6 pieces eggs
  • 2 tablespoons butter
  • 1 large (finely chopped) onion
  • 3 cloves (minced) garlic
  • 1 inch piece (grated) ginger
  • 1 cup tomato puree
  • 1 cup heavy cream
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 0.5 teaspoon (adjust to taste) red chili powder
  • 1 teaspoon (adjust to taste) salt
  • 1 teaspoon sugar
  • 1 cup water
  • 2 tablespoons (chopped, for garnish) fresh cilantro

Directions

Step 1

Place the eggs in a saucepan and cover them with water. Bring the water to a boil and then simmer for 10 minutes. Once done, transfer the eggs to a bowl of ice water to cool. Peel and set aside.

Step 2

Heat the butter in a large skillet over medium heat. Add the chopped onion and sauté for 4-5 minutes until golden brown.

Stir in the minced garlic and grated ginger. Cook for a minute until fragrant.

Add the tomato puree, turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Cook the mixture for 5-7 minutes, stirring occasionally, until the oil begins to separate.
