Ingredients

  • 8 oz chipped beef (thinly sliced)
  • 4 tbsp butter
  • 1 medium yellow onion (finely diced)
  • 8 oz mushrooms (sliced)
  • 3 tbsp all-purpose flour
  • 2 cups milk (whole or 2%)
  • 0.5 cups heavy cream
  • 0.25 tsp black pepper
  • 0.125 tsp nutmeg (optional, freshly grated)
  • 1 tbsp fresh parsley (chopped, for garnish)

Directions

Step 1

Rinse the chipped beef under cold water to reduce some of its saltiness. Pat dry with paper towels and cut into small strips or bite-sized pieces. Set aside.

Step 2

In a large skillet, melt the butter over medium heat.

Step 3

Add the diced onion and cook for 3-4 minutes, stirring occasionally, until it begins to soften and turn translucent.

Step 4

Add the sliced mushrooms to the skillet and cook for another 5-6 minutes until the mushrooms are tender and lightly browned.

Step 5

Sprinkle the flour over the onions and mushrooms, stirring well to coat evenly, and cook for 1-2 minutes to eliminate the raw flour taste.

Step 6

Gradually pour in the milk while stirring constantly to create a smooth sauce. Once all the milk has been incorporated, stir in the heavy cream.

Step 7

Add the chipped beef to the sauce, stirring to combine. Reduce the heat to low and let the mixture simmer for 5-7 minutes, stirring occasionally, until thickened.

Step 8

Season with black pepper and nutmeg, if desired. Taste the sauce and adjust for seasoning if necessary (note that the beef is naturally salty, so additional salt is generally not needed).

Step 9

Remove from heat and garnish with chopped parsley before serving.

Step 10

Serve warm over toast, biscuits, or mashed potatoes for a satisfying meal.
