Ingredients

  • 8 ounces Dried beef
  • 4 tablespoons Butter
  • 4 tablespoons All-purpose flour
  • 3 cups Milk
  • 0.25 teaspoons Ground black pepper
  • 0.25 teaspoons Garlic powder (optional)
  • 4 slices Bread (toasted)

Directions

Step 1

Rinse the dried beef under cold water to reduce excess salt. Pat it dry with a paper towel, then slice into small bite-sized pieces or strips.

Step 2

In a medium saucepan, melt the butter over medium heat until it begins to bubble, but not brown.

Step 3

Whisk in the flour, one tablespoon at a time, to form a smooth roux. Cook the roux for 1-2 minutes, whisking constantly, to eliminate the raw flour taste.

Step 4

Gradually add the milk, about 1/2 cup at a time, whisking constantly to prevent lumps. Continue adding and whisking until all the milk is incorporated and the sauce begins to thicken.

Step 5

Reduce the heat to low and stir in the ground black pepper and garlic powder, if using.

Step 6

Add the chopped dried beef to the sauce, stirring to combine. Let the mixture simmer gently for 2-3 minutes to heat the beef and meld the flavors.

Step 7

Taste and adjust seasoning if necessary, keeping in mind the saltiness of the dried beef.

Step 8

Toast the bread slices until golden brown. Serve the creamed chipped beef hot over the toasted bread.
