  • 240 grams all-purpose flour
  • 50 grams granulated sugar
  • 2 teaspoons baking powder
  • 0.25 teaspoons salt
  • 85 grams unsalted butter (cold, cubed)
  • 180 milliliters heavy cream
  • 1 teaspoon vanilla extract
  • 1 unit egg (for brushing, optional)
  • 1 tablespoon coarse sugar (optional)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingertips to rub the butter into the flour until the mixture resembles coarse crumbs. Work quickly to keep the butter cold.
