Ingredients

  • 4 pieces (6 oz each) salmon fillets (skinless)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 pieces garlic cloves (minced)
  • 1 cup heavy cream
  • 0.5 cup chicken or vegetable broth
  • 0.5 cup Parmesan cheese (grated)
  • 1 tablespoon lemon juice (freshly squeezed)
  • 2 tablespoons fresh parsley (chopped)
  • 2 tablespoons fresh dill (chopped)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Pat the salmon fillets dry with a paper towel. Season both sides with half of the salt and pepper.

Step 2

Heat a large skillet over medium heat and add the olive oil. Once hot, add the salmon fillets flesh-side down. Sear for 4-5 minutes, or until golden brown. Flip and cook for another 3-4 minutes until the salmon is just cooked through. Remove the salmon from the skillet and set aside.

Step 3

In the same skillet, reduce the heat to medium-low and add the butter. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 4

Pour in the chicken or vegetable broth and scrape any browned bits from the bottom of the skillet. Let the broth simmer for 2 minutes.

Step 5

Stir in the heavy cream and grated Parmesan cheese. Allow the sauce to cook for 3-4 minutes, stirring frequently, until it thickens slightly.

Step 6

Add the fresh lemon juice, parsley, and dill. Stir to combine, then season the sauce with the remaining salt and pepper. Taste and adjust seasoning if necessary.

Step 7

Return the cooked salmon fillets to the skillet, spooning some of the cream sauce over the top. Let the salmon warm through in the sauce for about 2 minutes.

Serve the Cream Salmon immediately, garnished with additional parsley or dill if desired. This dish pairs well with rice, mashed potatoes, or steamed vegetables.
