Ingredients

  • 14.75 oz canned salmon (or cooked fresh salmon, flaked)
  • 0.5 cup Cream of Wheat
  • 0.75 cup milk
  • 1 large egg
  • 0.5 cup onion, finely chopped
  • 0.25 cup celery, finely chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp butter or oil (for greasing or frying)
  • 0.5 cup breadcrumbs (optional, for coating patties)

Directions

Step 1

Preheat your oven to 375°F (190°C) if making a loaf. Grease a loaf pan or line it with parchment paper. If making patties, prepare a large skillet with butter or oil for frying and set aside.

Step 2

In a large mixing bowl, combine the canned salmon (along with its liquid) or flaked cooked salmon. Break it apart with a fork to remove any large bones or skin if desired.

Step 3

In a small saucepan over medium heat, combine the Cream of Wheat and milk. Stir continuously until the mixture thickens, about 2-3 minutes. Remove from heat and allow to cool slightly.

Step 4

Add the cooked Cream of Wheat to the salmon mixture, along with the egg, chopped onion, celery, parsley, lemon juice, salt, and black pepper. Mix thoroughly until well combined.

Step 5

If preparing as a loaf, transfer the mixture to the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for 25-30 minutes or until the loaf is firm and golden on top.

Step 6

If making patties, shape the mixture into 8-10 evenly sized patties. For additional crispiness, dredge each patty lightly in breadcrumbs before frying.

Step 7

Heat the skillet over medium heat and add butter or oil. Fry the patties for 3-4 minutes per side, or until golden brown and heated through. Work in batches if necessary to avoid overcrowding the skillet.

Step 8

Serve the salmon loaf or patties warm with your choice of sauce, such as tartar sauce, a squeeze of lemon, or a dollop of sour cream. Pair with a fresh salad or steamed vegetables for a complete meal.
