Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 medium, finely chopped yellow onion
  • 3 minced garlic cloves
  • 1 medium, diced carrot
  • 1 diced celery stalk
  • 6 medium, roughly chopped fresh ripe tomatoes
  • 1 14-ounce can canned crushed tomatoes
  • 3 cups vegetable stock
  • 1 teaspoon sugar
  • 0.5 cup heavy cream
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon (or to taste) black pepper
  • 5 chopped (plus more for garnish) fresh basil leaves
  • 1 cup (optional for garnish) croutons

Directions

Step 1

Heat a large pot over medium heat. Add the butter and olive oil and let the butter melt.

Step 2

Add the chopped onion, minced garlic, diced carrot, and diced celery to the pot. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are soft and fragrant.

Step 3

Stir in the fresh chopped tomatoes, canned crushed tomatoes, and vegetable stock. Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 20 minutes.

Step 4

Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth. Return the soup to the pot if using a blender.

Step 5

Stir in the heavy cream, sugar, chopped basil, salt, and black pepper. Simmer for 5 more minutes, stirring occasionally. Taste and adjust seasoning if needed.

Step 6

Ladle the soup into bowls and garnish with fresh basil leaves. Add croutons if desired for extra texture and flavor.

Step 7

Serve warm and enjoy!
