Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 whole garlic cloves, minced
  • 28 ounces canned whole peeled tomatoes
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup fresh basil leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon sugar (optional, to taste)

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add diced onion and sauté until softened and translucent, about 5 minutes.

Step 3

Stir in minced garlic and cook for an additional 1-2 minutes until fragrant.

Step 4

Pour in the canned whole peeled tomatoes, including their juice. Break them up slightly with a spoon.

Step 5

Add vegetable broth and bring the mixture to a simmer. Cook for 15 minutes, stirring occasionally.

Step 6

Remove the pot from heat and let it cool slightly. Stir in the fresh basil leaves.

Step 7

Using an immersion blender, blend the soup directly in the pot until smooth. Alternatively, transfer the soup to a countertop blender in batches and blend until creamy, then return it to the pot.

Step 8

Stir in heavy cream and season with salt, black pepper, and optional sugar to balance the acidity of the tomatoes.

Step 9

Return the pot to low heat and gently warm the soup, stirring, until heated through (do not boil).

Step 10

Serve hot garnished with additional basil leaves and a drizzle of olive oil, if desired.
