Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic cloves, minced
  • 28 ounces canned whole peeled tomatoes
  • 3 cups vegetable stock
  • 1 cup heavy cream
  • 2 tablespoons prepared horseradish
  • 1 teaspoon sugar (optional)
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 4 leaves fresh basil leaves (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and sauté for 5-7 minutes until softened and translucent.

Step 3

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 4

Pour in the canned tomatoes along with their juices. Break up the tomatoes with a wooden spoon.

Step 5

Add the vegetable stock and bring the mixture to a gentle simmer. Let it cook for 15 minutes, stirring occasionally.

Step 6

Use an immersion blender to purée the soup until smooth, or transfer it in batches to a countertop blender and blend carefully, then return it to the pot.

Step 7

Lower the heat to medium-low and stir in the heavy cream, making sure the soup does not boil.

Step 8

Add the prepared horseradish and mix well. Taste the soup and adjust the flavor with sugar (if the tomatoes are too acidic), salt, and black pepper.

Step 9

Cook for another 5 minutes to combine flavors fully.

Step 10

Ladle the soup into bowls and garnish with fresh basil leaves if desired.

Step 11

Serve hot and enjoy!
