Ingredients

  • 1 cup Sun-dried tomatoes
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, finely chopped
  • 3 units Garlic cloves, minced
  • 2 tablespoons Tomato paste
  • 4 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Parmesan cheese, grated (optional, for garnish)
  • 4 units Fresh basil leaves (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and cook for 5-7 minutes, stirring occasionally, until the onion becomes soft and translucent.

Step 3

Stir in the minced garlic and cook for 1 minute, ensuring it doesn’t burn.

Step 4

Add the tomato paste, dried basil, and dried oregano. Cook, stirring constantly, for 2 minutes to deepen the flavors.

Step 5

Add the sun-dried tomatoes and chicken or vegetable broth to the pot. Stir well and bring to a simmer.

Step 6

Cover the pot and let it simmer for 15 minutes to allow the flavors to meld.

Step 7

Using an immersion blender (or carefully transferring in batches to a blender), blend the soup until smooth.

Step 8

Return the pot to low heat and stir in the heavy cream. Heat gently until warmed through, but do not boil.

Step 9

Season with salt and black pepper to taste.

Step 10

Serve hot, garnished with grated Parmesan and fresh basil leaves, if desired.
