  • 30 grams butter
  • 1 medium, finely chopped onion

  • 500 milliliters vegetable broth
  • 200 milliliters heavy cream
  • 0.5 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper
  • 0.25 teaspoon, freshly grated nutmeg

Directions

Step 1

Rinse the fresh spinach leaves thoroughly under cold water to remove any dirt or grit. Drain well and set aside.

Step 2

Melt the butter in a large pot over medium heat. Add the finely chopped onion and cook for about 5 minutes until it becomes translucent, stirring occasionally.

Step 3

Add the minced garlic to the pot and sauté for another 1-2 minutes until fragrant, but be careful not to burn it.

Add the fresh spinach to the pot and cook until it wilts, stirring frequently, about 3-4 minutes.

Step 5

Pour in the vegetable broth and bring the mixture to a gentle simmer. Cook for 5 minutes to blend the flavors.
