Ingredients

  • 2 tablespoons unsalted butter
  • 2 medium yellow onions, diced
  • 4 medium russet potatoes, peeled and diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable stock
  • 1 cup heavy cream
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons chives, chopped (for garnish)

Directions

Step 1

In a large pot, melt the butter over medium heat until it begins to foam.

Step 2

Add the diced onions and cook for 5–7 minutes, stirring often, until they are soft and translucent.

Step 3

Stir in the minced garlic and cook for another 1 minute until fragrant.

Step 4

Add the diced potatoes to the pot, followed by the chicken or vegetable stock. Stir to combine.

Step 5

Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for 20 minutes, or until the potatoes are fork-tender.

Step 6

Use an immersion blender to blend the soup until smooth, or transfer it in batches to a countertop blender and puree.

Step 7

Once blended, return the soup to the pot (if using a countertop blender) and stir in the heavy cream, thyme, salt, and black pepper.

Step 8

Cook for an additional 5 minutes over low heat, allowing the flavors to meld together.

Step 9

Taste and adjust seasoning as needed with more salt or pepper.

Step 10

Serve hot, garnished with chopped chives, and enjoy!
