Ingredients

  • 2 cups Raw button mushrooms
  • 1 cup Raw cashews (soaked for 2-4 hours)
  • 2 cups Filtered water
  • 2 tablespoons Fresh lemon juice
  • 1 tablespoon Tamari or coconut aminos
  • 1 small Garlic clove
  • 2 tablespoons Nutritional yeast
  • 0.5 teaspoon Sea salt
  • 0.25 teaspoon Ground black pepper
  • 1 teaspoon Fresh thyme (optional, for garnish)
  • 1 tablespoon Olive oil (optional, for richness)

Directions

Step 1

Soak the raw cashews in filtered water for 2-4 hours, then drain and rinse them thoroughly.

Step 2

Clean the mushrooms with a damp cloth to remove any dirt or debris. Slice them into smaller pieces for easier blending.

Step 3

In a high-speed blender, combine the soaked cashews, sliced mushrooms, 2 cups of filtered water, lemon juice, tamari or coconut aminos, garlic, nutritional yeast, sea salt, and ground black pepper.

Step 4

Blend on high until the mixture is completely smooth and creamy. This may take 1-2 minutes depending on your blender.

Step 5

Taste the soup and adjust seasoning if needed, adding more salt, pepper, or lemon juice to taste.

Step 6

If you prefer the soup slightly warm (but still raw), blend for another minute or two until the high-speed blending naturally warms it up. Do not let it exceed 118°F to maintain its raw status.

Step 7

Pour the soup into bowls and garnish with fresh thyme and a drizzle of olive oil if desired.

Step 8

Serve immediately and enjoy this revitalizing raw cream of mushroom soup.
