Ingredients

  • 16 oz (canned, drained) Hearts of palm
  • 3 tbsp Unsalted butter
  • 1 medium (chopped) Yellow onion
  • 2 cloves (minced) Garlic
  • 3 tbsp All-purpose flour
  • 4 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • 1 tsp (or to taste) Salt
  • 0.5 tsp (or to taste) Black pepper
  • 2 tbsp (chopped, for garnish) Fresh parsley

Directions

Step 1

Drain the canned hearts of palm and chop them into 1-inch pieces. Set aside.

Step 2

In a large pot, melt the butter over medium heat. Add the chopped onion and cook for 5-7 minutes, stirring occasionally, until softened and translucent.

Step 3

Add the minced garlic to the pot and cook for another 1 minute until fragrant.

Step 4

Sprinkle the flour over the onion and garlic mixture and stir well to coat. Cook for 2 minutes, stirring constantly, to remove the raw flavor of the flour.

Step 5

Slowly pour in the chicken or vegetable broth, whisking continuously to prevent lumps. Bring the mixture to a simmer.

Add the chopped hearts of palm to the pot. Reduce the heat to medium-low and simmer for 15 minutes, allowing the flavors to meld.

Using an immersion blender, blend the soup directly in the pot until smooth. Alternatively, transfer the mixture to a countertop blender, working in batches if necessary, and blend until fully puréed. Return the soup to the pot if using a countertop blender.

Step 8

Stir in the heavy cream and season with salt and black pepper to taste. Simmer for another 5 minutes to warm through, but do not let the soup boil after adding the cream.

Step 9

Serve the soup hot, garnished with fresh parsley.
