Ingredients

  • 1 large head (about 2 pounds) cauliflower
  • 1 medium onion
  • 3 garlic cloves
  • 2 tablespoons unsalted butter
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup, shredded sharp cheddar cheese (optional, for topping)
  • 0.25 cup crispy crumbled bacon (optional, for topping)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons chopped fresh chives (optional, for garnish)

Directions

Step 1

Remove the leaves and core from the cauliflower, then chop into medium-sized florets.

Step 2

Peel and dice the onion, and mince the garlic cloves.

Step 3

In a large pot, melt the butter over medium heat. Add the diced onion and cook for 4-5 minutes, stirring occasionally, until softened and translucent.

Step 4

Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

Step 5

Add the chopped cauliflower to the pot and pour in the chicken or vegetable broth. Make sure the cauliflower is mostly submerged in the liquid.

Step 6

Bring the mixture to a boil, then reduce the heat to low. Simmer for about 15-20 minutes, or until the cauliflower is very tender and can be easily pierced with a fork.

Step 7

Use an immersion blender to puree the soup directly in the pot until smooth and creamy. Alternatively, carefully transfer the soup to a blender in batches and puree, then return the soup to the pot.

Step 8

Stir in the heavy cream and season with salt and black pepper. Taste and adjust seasoning as needed.

Step 9

Ladle the soup into bowls and, if desired, top with shredded sharp cheddar cheese, crispy crumbled bacon, and fresh chives.

Step 10

Serve hot and enjoy your Cream of Fauxtato Soup!
