Ingredients

  • 1 large head cauliflower
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium, diced yellow onion
  • 3 minced garlic cloves
  • 4 cups vegetable broth
  • 1 cup Heavy cream
  • 0.25 teaspoons nutmeg
  • 1 teaspoon (to taste) salt
  • 0.5 teaspoons (to taste) black pepper
  • 2 tablespoons (for garnish) fresh parsley or chives

Directions

Step 1

Chop the cauliflower into small florets and set aside.

Step 2

In a large pot, melt the butter and olive oil over medium heat.

Step 3

Add the diced onion and cook until soft and translucent, about 5 minutes.

Step 4

Stir in the minced garlic and cook for an additional 1-2 minutes, being careful not to burn it.

Step 5

Add the cauliflower florets to the pot, then pour in the vegetable broth.

Step 6

Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, or until the cauliflower is tender.

Step 7

Using an immersion blender (or carefully transferring the soup to a countertop blender in batches), blend the soup until completely smooth.

Step 8

Stir in the heavy cream, nutmeg, salt, and black pepper. Adjust the seasoning to taste.

Step 9

Simmer the soup for another 5 minutes to heat through but do not let it boil.

Step 10

Serve hot, garnished with fresh parsley or chives if desired.
