Ingredients

  • 1 cup raw cashews
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic cloves, minced
  • 2 stalks celery stalks, chopped
  • 1 large carrot, chopped
  • 4 cups vegetable broth
  • 1 leaf bay leaf
  • 0.25 teaspoon nutmeg, ground
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Place the raw cashews in a bowl and cover them with hot water. Allow them to soak for at least 20 minutes while you prepare the other ingredients. Drain before use.

Step 2

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until soft and translucent, about 3-4 minutes.

Step 3

Stir in the minced garlic, chopped celery, and carrot. Cook for another 5 minutes, stirring occasionally, until the vegetables are softened.

Step 4

Pour in the vegetable broth and add the drained cashews, bay leaf, ground nutmeg, salt, and black pepper. Stir to combine.

Step 5

Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for about 15 minutes, allowing the flavors to meld together.

Step 6

Remove the pot from the heat and discard the bay leaf. Allow the soup to cool slightly before blending.

Step 7

Using an immersion blender or a countertop blender working in batches, blend the soup until smooth and creamy.

Step 8

Stir in the lemon juice and taste to adjust seasoning if needed. Add more salt, pepper, or nutmeg to your preference.

Step 9

Ladle the soup into bowls and garnish with chopped fresh parsley if desired. Serve warm and enjoy!
