Ingredients

  • 500 grams carrots
  • 1 medium onion
  • 2 pieces garlic cloves
  • 1 teaspoon ground coriander
  • 10 grams fresh coriander
  • 1 liter vegetable stock
  • 100 milliliters heavy cream
  • 1 tablespoon olive oil or butter
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Peel and chop the carrots into small pieces for quicker cooking. Dice the onion and finely mince the garlic cloves.

Step 2

Heat the olive oil or butter in a large pot over medium heat. Add the chopped onion and garlic, and sauté for 3-4 minutes until softened and fragrant.

Step 3

Stir in the ground coriander and cook for an additional 1 minute to release its aroma.

Step 4

Add the chopped carrots to the pot and pour in the vegetable stock. Stir well and bring the mixture to a boil.

Step 5

Lower the heat, cover the pot, and let it simmer for 20 minutes, or until the carrots are tender and easily pierced with a fork.
