Ingredients

  • 500 grams broccoli florets
  • 1 medium onion
  • 2 cloves garlic cloves
  • 1 tablespoon olive oil
  • 4 cups low-sodium vegetable broth
  • 1 cup low-fat milk
  • 1 medium potato
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon nutmeg (optional)
  • 2 tablespoons Greek yogurt (optional garnish)
  • 1 tablespoon fresh parsley (optional garnish)

Directions

Step 1

Chop the broccoli florets into smaller pieces if needed. Dice the onion, mince the garlic, and peel and dice the potato into small cubes.

Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté for 3-5 minutes until softened and fragrant.

Add the potato cubes and cook for another 2 minutes, stirring occasionally.
