Ingredients

  • 4 cups fresh or frozen corn kernels
  • 1 cup heavy cream
  • 1 cup whole milk
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup parmesan cheese (optional, grated)

Directions

Step 1

If using fresh corn, cut the corn kernels off the cob. If using frozen corn, thaw and drain before use.

Step 2

In a medium saucepan over medium heat, melt the unsalted butter. Add the all-purpose flour and whisk until smooth, cooking for about 1 minute to remove the raw flour taste.

Step 3

Gradually whisk in the whole milk and heavy cream, stirring constantly to prevent lumps. Cook for 2-3 minutes, or until the mixture thickens slightly.

Step 4

Stir in the corn kernels, granulated sugar, salt, and black pepper. Reduce the heat to low and simmer for 10-12 minutes, stirring occasionally, to allow the flavors to meld together.

Step 5

If the mixture becomes too thick, add a splash of milk to reach your desired consistency.

Step 6

For added flavor, stir in the grated parmesan cheese, if using, and cook for another 1-2 minutes until the cheese melts and combines with the cream.

Step 7

Taste and adjust seasoning if necessary, then remove from heat.

Step 8

Serve warm as a side dish, garnished with additional parmesan or chopped parsley if desired.
