Ingredients

  • 2 cups All-purpose flour
  • 0.5 cups Granulated sugar
  • 1 cup Unsalted butter, melted
  • 16 oz Cream cheese, softened
  • 0.75 cups Granulated sugar (for filling)
  • 1 teaspoon Vanilla extract
  • 2 large Eggs
  • 0.75 cups Raspberry preserves
  • 0.5 cups Fresh raspberries (optional for garnish)
  • 1 tablespoon Powdered sugar (optional for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 9x13-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.

Step 2

In a medium mixing bowl, combine the flour and 1/2 cup of granulated sugar. Pour in the melted butter and stir until the mixture forms a crumbly dough.

Step 3

Press the dough evenly into the bottom of the prepared baking dish to form the crust. Bake for 15 minutes, or until the edges are lightly golden. Remove from the oven and let it cool slightly.

Step 4

In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy. Add 3/4 cup of granulated sugar and vanilla extract, and mix until well combined.

Step 5

Add the eggs one at a time, beating after each addition, until the filling is smooth and creamy.

Step 6

Pour the cream cheese mixture over the slightly cooled crust, spreading it evenly with a spatula.

Step 7

Dollop the raspberry preserves over the cream cheese layer. Use a toothpick or knife to gently swirl the preserves into the filling, creating a marbled effect.

Step 8

Bake in the preheated oven for 20 minutes, or until the center is set and no longer jiggly.

Step 9

Remove from the oven and allow the bars to cool to room temperature. Then cover and refrigerate for at least 2 hours to fully set.

Step 10

Once chilled, lift the bars out of the baking dish using the parchment overhang. Slice into 16 squares.

Step 11

Optional: Garnish each bar with a fresh raspberry and dust lightly with powdered sugar before serving.
