Ingredients

  • 226 g Cream cheese
  • 50 g Granulated sugar
  • 1 tsp Vanilla extract
  • 100 g Dried cranberries
  • 2 sheets Puff pastry sheets
  • 1 Egg
  • 1 tbsp Water
  • 30 g Powdered sugar

Directions

Step 1

Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.

Step 2

In a medium mixing bowl, combine the cream cheese, granulated sugar, and vanilla extract. Mix until smooth and creamy.

Step 3

Stir the dried cranberries into the cream cheese mixture until evenly distributed.

Step 4

Roll out the puff pastry sheets on a lightly floured surface if needed, and cut each sheet into 4 squares (total of 8 squares).

Step 5

Place a heaping spoonful of the cream cheese mixture in the center of each pastry square.

Step 6

Fold each square diagonally to form a triangle, then press the edges together with a fork to seal.

Step 7

In a small bowl, whisk together the egg and water to create an egg wash. Brush the tops of the pastry pockets with the egg wash for a golden finish.

Step 8

Use a sharp knife to make a small slit on top of each pocket to allow steam to escape during baking.

Step 9

Arrange the pockets on the prepared baking sheet and bake in the preheated oven for 12-15 minutes, or until the pastry is puffed and golden brown.

Step 10

Remove from the oven and let the pockets cool slightly on a wire rack.

Step 11

Dust the cooled pockets with powdered sugar before serving.
