Ingredients

  • 2 cups Sushi rice
  • 2.5 cups Water
  • 0.25 cups Rice vinegar
  • 2 tablespoons Sugar
  • 1 teaspoons Salt
  • 5 sheets Nori seaweed sheets
  • 4 ounces Cream cheese
  • 8 sticks Imitation crab sticks
  • 1 medium Cucumber
  • 1 large Avocado
  • 0 to taste Soy sauce
  • 0 optional Pickled ginger
  • 0 optional Wasabi

Directions

Step 1

Rinse the sushi rice under cold water until the water runs clear.

Step 2

Combine the rice and water in a rice cooker or a medium-sized pot. Cook according to the rice cooker instructions, or bring the pot to a boil, then cover and reduce heat to low, cooking for 18-20 minutes. Remove from heat and let sit covered for 10 minutes.

Step 3

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice while it’s still warm, then set aside to cool to room temperature.

Step 4

Slice the cucumber and avocado into thin, matchstick-like pieces. Cut the cream cheese into thin strips that are easy to roll.

Lay a bamboo sushi mat on a clean surface and place a sheet of plastic wrap over it. Lay one sheet of nori on top, shiny side down.

Using the bamboo mat to guide you, roll the nori tightly from the filling side toward the sealing edge. Press gently to seal the roll.

Use a sharp knife to cut the roll into 6-8 equal pieces. Clean the knife with a damp cloth between cuts to keep the edges clean.

Repeat with the remaining nori sheets and fillings.
