Ingredients

  • 2 lbs Yukon Gold potatoes
  • 4 oz Low-fat cream cheese

  • 8 cups Water

Directions

Step 1

Peel the Yukon Gold potatoes and cut them into 1- to 2-inch chunks for even cooking.

In a large pot, bring 8 cups of water to a boil. Add the potato chunks and 1/2 teaspoon of salt to the pot.

Step 3

Boil the potatoes for 15-20 minutes or until they are fork-tender and easily mashable.
