Ingredients

  • 20 pieces White button mushrooms
  • 8 oz Cream cheese (softened)
  • 6 slices Cooked bacon (crumbled)
  • 2 cloves Garlic (minced)
  • 2 tbsp Fresh parsley (finely chopped)
  • 1 cup Grated Parmesan cheese
  • 2 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Carefully clean the mushrooms with a damp paper towel and remove the stems by gently twisting and pulling them out. Set the caps aside and finely chop the stems.

Step 3

Heat 1 tablespoon of olive oil in a pan over medium heat. Add the chopped mushroom stems and minced garlic. Cook for 3-4 minutes, stirring occasionally, until softened. Remove from heat and allow to cool slightly.

Step 4

In a medium bowl, mix together the softened cream cheese, crumbled bacon, cooked mushroom stems and garlic, chopped parsley, grated Parmesan cheese, salt, and black pepper until well combined.

Step 5

Brush the mushroom caps with the remaining tablespoon of olive oil and arrange them hollow side up on a baking sheet lined with parchment paper.

Step 6

Spoon the cream cheese mixture into each mushroom cap, ensuring it is evenly distributed.

Step 7

Bake the stuffed mushrooms in the preheated oven for 20-25 minutes, or until the tops are golden and bubbly.

Step 8

Remove the mushrooms from the oven and let them cool for 5 minutes before serving.

Step 9

Garnish with additional parsley if desired and serve warm.
