Ingredients

  • 1 pint Pistachio ice cream
  • 1 pint Chocolate ice cream
  • 1 pint Cherry ice cream
  • 1 cup Shelled pistachios
  • 1 cup Dark chocolate chips
  • 1 cup Candied cherries
  • 1 cup Whipped cream
  • 1 cup Crushed biscotti
  • 6 pieces Maraschino cherries (for garnish)

Directions

Step 1

Prepare a loaf pan or similar container by lining it with plastic wrap, leaving enough overhang to fully cover the top once assembled.

Step 2

Take the pistachio, chocolate, and cherry ice creams out of the freezer and allow them to soften slightly, about 5–10 minutes.

Step 3

In a medium bowl, mix the pistachio ice cream with the shelled pistachios, stirring gently to evenly distribute the nuts. Spread this mixture evenly into the bottom of the prepared container to form the first layer. Freeze for 10 minutes to firm up.

Step 4

In another bowl, mix the chocolate ice cream with the dark chocolate chips. Spread this mixture over the pistachio layer to form the second layer. Freeze for another 10 minutes.

Step 5

In a third bowl, mix the cherry ice cream with the candied cherries. Spread this as the final layer on top of the chocolate layer. Fold the excess plastic wrap over the top to seal the layers. Freeze the assembled spumoni for at least 4 hours, or until firm.

Step 6

When ready to serve, remove the spumoni from the pan by lifting it out using the plastic wrap. Peel away the wrap and transfer the spumoni onto a cutting board.
