  • 1 cup sweet corn
  • 2 tablespoons tomato paste
  • 1.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Set aside.

Step 2

In a medium pot, bring 4 cups of water to a boil. Add a pinch of salt and the rice. Reduce the heat to low, cover, and simmer for about 15-18 minutes or until the rice is cooked and water is fully absorbed. Remove from heat, fluff with a fork, and set aside.
