Ingredients

  • 4 ears Fresh corn on the cob
  • 4 tablespoons Butter
  • 4 tablespoons Mayonnaise
  • 0.5 cups Cotija cheese (crumbled)
  • 1 teaspoon Chili powder
  • 0.5 teaspoons Paprika
  • 2 tablespoons Fresh cilantro (chopped)
  • 1 whole Lime
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper

Directions

Step 1

Peel back the husks of the corn (but don't remove them) and remove all of the silk. Fold the husks back over the kernels, and soak the corn in cold water for 10 minutes to prevent burning.

Preheat a grill to medium-high heat.

Step 3

Remove the corn from the water, shake off excess water, and grill the corn with the husks still on for 10-12 minutes, turning occasionally, until the kernels are tender and slightly charred.

Carefully remove the husks and continue grilling the corn for another 3-5 minutes, rotating frequently for an even char.

While the corn is grilling, prepare the toppings. In a small bowl, mix the chili powder, paprika, salt, and pepper.

Once the corn is done cooking, brush each ear with 1 tablespoon of butter and 1 tablespoon of mayonnaise.
