  • 4 pieces Flour tortillas
  • 1.5 cups Shredded Monterey Jack cheese

  • 2 cloves Garlic, minced
  • 1 teaspoon Cajun seasoning
  • 2 tablespoons Fresh cilantro, chopped
  • 0.5 cup Sour cream (optional, for serving)
  • 0.5 cup Salsa (optional, for serving)

Directions

Step 1

Heat a large skillet over medium heat and melt 1 tablespoon of butter.

Step 2

Add the diced green bell pepper, red onion, and minced garlic to the skillet. Cook for 3-4 minutes, stirring occasionally, until the vegetables soften and become fragrant.

Step 3

Stir in the cooked crawfish tails and Cajun seasoning. Cook for an additional 2-3 minutes until the crawfish is heated through. Remove from heat and set aside.

Step 4

Place a clean skillet or flat griddle over medium heat. Melt 1/2 tablespoon of butter and place one flour tortilla on the skillet.

Step 5

Sprinkle 1/4 of the shredded Monterey Jack cheese evenly over the tortilla, then add half of the crawfish mixture on top. Sprinkle another 1/4 of the cheese over the crawfish mixture before placing a second tortilla on top.
