Ingredients

  • 4 cups old-fashioned rolled oats
  • 1 cup raw almonds, roughly chopped
  • 1 cup raw pecans, roughly chopped
  • 1 cup unsweetened shredded coconut
  • 0.5 cup pumpkin seeds (pepitas)
  • 0.5 cup sunflower seeds
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon fine sea salt
  • 0.5 cup maple syrup
  • 0.25 cup honey
  • 0.5 cup coconut oil, melted
  • 2 teaspoons vanilla extract
  • 1 cup dried cranberries (or any dried fruit of choice)

Directions

Step 1

Preheat your oven to 325°F (163°C) and line two large baking sheets with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, chopped almonds, chopped pecans, shredded coconut, pumpkin seeds, sunflower seeds, ground cinnamon, and sea salt. Stir until evenly distributed.

Step 3

In a separate small bowl, whisk together the maple syrup, honey, melted coconut oil, and vanilla extract until smooth.

Step 4

Pour the wet ingredients over the dry ingredients in the mixing bowl. Using a wooden spoon or spatula, mix thoroughly until all the dry ingredients are evenly coated.

Step 5

Evenly spread the granola mixture onto the two prepared baking sheets, forming a thin, even layer.

Step 6

Bake in the preheated oven for 25-30 minutes, stirring every 10 minutes to ensure even browning. The granola is done when it’s golden brown and aromatic.

Step 7

Remove from the oven and let the granola cool completely on the baking sheets. It will crisp up as it cools.

Step 8

Once the granola is fully cooled, stir in the dried cranberries or your preferred dried fruit.

Step 9

Store the granola in an airtight container at room temperature for up to 2 weeks or in the freezer for longer storage.

Step 10

Serve as a breakfast cereal with milk, as a snack on its own, or as a topping for yogurt or smoothie bowls.
