Ingredients

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 2 large Eggs
  • 0.75 cup Milk
  • 0.25 cup Unsalted butter, melted
  • 1 teaspoon Vanilla extract
  • 1 cup Fresh cranberries, chopped
  • 1 tablespoon Orange zest
  • 0.5 cup Walnuts, chopped (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg. Set aside.

Step 3

In a separate bowl, beat the eggs. Add the milk, melted butter, and vanilla extract, and stir until well combined.

Step 4

Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix.

Step 5

Fold in the chopped cranberries, orange zest, and walnuts (if using) until evenly distributed in the batter.

Step 6

Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

Step 7

Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center of the bread comes out clean.

Step 8

Remove the bread from the oven and allow it to cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

Step 9

Slice and serve as is, or with a pat of butter and a drizzle of honey for extra flavor.
