Ingredients

  • 1 cup dried cranberries
  • 0.5 cup kalamata olives
  • 2 tablespoons capers
  • 2 tablespoons fresh parsley
  • 1 large garlic clove
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon honey
  • 0.25 teaspoon black pepper

Directions

Step 1

Place the dried cranberries in a small bowl and cover them with warm water. Let them soak for 10 minutes to soften, then drain well.

Step 2

In a food processor, combine the softened cranberries, kalamata olives, capers, parsley, and garlic clove.

Step 3

Pulse the mixture a few times until the ingredients are roughly chopped but not pureed. Scrape down the sides of the processor bowl as needed.

Add the fresh lemon juice, olive oil, honey, and black pepper to the mixture in the food processor.
