Ingredients

  • 2 cups Cranberry juice
  • 1 cup Water
  • 1 cup Granulated sugar
  • 2 packets Unflavored gelatin
  • 1 cup Fresh cranberries
  • 1 teaspoon Orange zest
  • 1 cup Orange juice
  • 0.5 cup Cold water

Directions

Step 1

In a medium saucepan, combine the cranberry juice, water, and sugar. Heat over medium-high heat and stir until the sugar is fully dissolved. Bring to a boil and then reduce to a simmer.

Step 2

Add the fresh cranberries to the saucepan. Cook for about 5 minutes, or until the cranberries start to pop and soften slightly. Remove saucepan from heat.

Step 3

Sprinkle the unflavored gelatin over 1/2 cup of cold water in a small bowl. Let it sit for 5 to 10 minutes to allow the gelatin to bloom.

Step 4

Stir the bloomed gelatin into the hot cranberry mixture until it dissolves completely. Ensure there are no lumps.

Add the orange zest and orange juice to the mixture, stirring to combine fully.

Step 6

Lightly grease a star-shaped gelatin mold with a neutral oil or nonstick cooking spray for easy release.

Pour the cranberry mixture into the prepared mold. Allow the mixture to come to room temperature before transferring it to the refrigerator.
