Ingredients

  • 1 cup Fresh or frozen cranberries
  • 2 tablespoons Honey
  • 1/3 cup Olive oil
  • 2 tablespoons Apple cider vinegar
  • 2 tablespoons Orange juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoons Water

Directions

Step 1

In a small saucepan, combine the cranberries and water. Cook over medium heat for 4-5 minutes, or until the cranberries are softened and start to burst.

Step 2

Remove the saucepan from heat and allow the cranberries to cool slightly for 2-3 minutes.

Step 3

Transfer the cranberry mixture to a blender or food processor.

Step 4

Add honey, olive oil, apple cider vinegar, orange juice, Dijon mustard, salt, and black pepper to the blender.

Step 5

Blend on high speed until the mixture is smooth and creamy, approximately 30-60 seconds.

Step 6

Taste and adjust the seasoning, adding more honey for sweetness, vinegar for tanginess, or salt and pepper as desired.

Step 7

Strain the dressing through a fine-mesh sieve if you prefer a smoother texture.

Step 8

Pour the dressing into a jar or bottle and refrigerate for at least 30 minutes to chill and allow the flavors to meld.

Step 9

Shake well before serving. Drizzle over your favorite salad and enjoy!
