Ingredients

  • 4 pieces Bone-in pork chops
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 large Onion, finely diced
  • 3 cloves Garlic, minced
  • 1 cup Dried cranberries
  • 1 cup Cranberry juice (unsweetened)
  • 1 cup Chicken broth
  • 2 tablespoons Brown sugar
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Fresh rosemary, chopped
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water

Directions

Step 1

Season the pork chops on both sides with salt and black pepper.

Step 2

Heat a large skillet over medium-high heat. Add olive oil and 1 tablespoon of butter.

Step 3

Sear the pork chops for 3-4 minutes on each side, or until golden brown. Remove them from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of butter. Lower the heat to medium and sauté the diced onion for 3-4 minutes until softened.

Step 5

Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 6

Stir in the dried cranberries, cranberry juice, chicken broth, brown sugar, apple cider vinegar, and chopped rosemary. Bring the mixture to a simmer.

Step 7

Return the seared pork chops to the skillet, nestling them into the sauce. Cover the skillet and simmer on low heat for 15-20 minutes, or until the pork chops are fully cooked and reach an internal temperature of 145°F (63°C).

Step 8

In a small bowl, mix the cornstarch and water to create a slurry. Stir the slurry into the sauce to thicken it, cooking for 1-2 more minutes.

Step 9

Taste the sauce and adjust the seasoning with additional salt or pepper if needed.

Step 10

Serve the pork chops with the cranberry sauce spooned on top. Pair with mashed potatoes, rice, or roasted vegetables for a complete meal.
