Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 can (20 ounces) canned pineapple chunks (with juice)
  • 1 can (14 ounces) whole-berry cranberry sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 3 cloves garlic cloves, minced
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons chopped fresh parsley (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.

Step 3

Season the chicken breasts on both sides with salt, black pepper, and dried thyme.

Step 4

Sear the chicken breasts in the skillet for 2-3 minutes per side, or until golden brown. Remove the chicken from the skillet and set aside.
