Ingredients

  • 2 pieces (about 1 pound each) pork tenderloin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup fresh cranberries
  • 0.5 cup orange juice
  • 1 tablespoon orange zest
  • 0.25 cup honey
  • 2 tablespoons light brown sugar
  • 2 cloves minced garlic
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 cup chicken broth
  • 1 sprig (optional, for garnish) fresh rosemary

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the pork tenderloins dry with paper towels and season them evenly with salt and black pepper on all sides.

Step 3

In a large oven-safe skillet or cast-iron pan, heat the olive oil over medium-high heat. Sear the pork tenderloins on all sides until golden brown, about 2-3 minutes per side. Remove and set aside.
