Ingredients

  • 1.5 lbs Pork tenderloin
  • 1 cup Dried cranberries
  • 0.5 cup Fresh orange juice
  • 1 tablespoon Orange zest
  • 0.5 cup Chicken broth
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Olive oil
  • 2 tablespoons Honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Fresh rosemary, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the pork tenderloin dry with paper towels and season it generously with salt and black pepper.

Step 3

In an oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Sear the pork on all sides until golden brown, about 3-4 minutes per side. Remove from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil and reduce the heat to medium. Sauté the minced garlic until fragrant, about 1 minute.
