Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2.5 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 tablespoon orange zest
  • 1/2 cup dried cranberries
  • 1/4 cup shelled, unsalted pistachios, roughly chopped
  • 2/3 cup heavy cream
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk (for brushing)
  • 1 tablespoon coarse sugar (optional, for topping)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.

Step 3

Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.

Step 4

Stir in the orange zest, dried cranberries, and chopped pistachios.

Step 5

In a small bowl, whisk together the heavy cream, egg, and vanilla extract. Pour the wet mixture into the dry ingredients and gently stir until a dough forms. Be careful not to overmix.

Step 6

Transfer the dough to a lightly floured surface and gently knead it a few times until it comes together. Pat the dough into a 1-inch thick circle, about 6-7 inches in diameter.

Step 7

Using a sharp knife or bench scraper, cut the dough into 8 equal wedges. Place the wedges on the prepared baking sheet, spacing them slightly apart.

Step 8

Brush the tops of the scones with milk and sprinkle with coarse sugar, if desired.

Step 9

Bake in the preheated oven for 18-20 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.

Step 10

Allow the scones to cool for 5-10 minutes on the baking sheet before serving. Enjoy warm or at room temperature.
