Ingredients

  • 2 cups Rolled oats
  • 1 cup Dried cranberries
  • 0.5 cup Almonds (roughly chopped)
  • 0.5 cup Honey
  • 0.5 cup Peanut butter (or almond butter)
  • 0.25 cup Brown sugar
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Ground cinnamon

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

Step 2

In a large mixing bowl, combine the rolled oats, dried cranberries, chopped almonds, salt, and ground cinnamon. Stir to evenly distribute the ingredients.

Step 3

In a small saucepan over medium heat, combine the honey, peanut butter, and brown sugar. Stir continuously until the mixture is smooth and begins to bubble gently, about 2-3 minutes.

Remove the saucepan from heat and stir in the vanilla extract.

Pour the wet mixture over the dry ingredients in the mixing bowl. Use a spatula to mix everything together until well combined and all the dry ingredients are coated.
